Finally got this working on my Dell Precision M4600 laptop with its ATI video chipset...
In Ubuntu 12.04, the "Settings / Display" GUI appears to support multiple displays, but if I try to connect a second screen, an error message pops up complaining that the total desktop size would exceed 1920x1920. So until now I'd given up on the ideal of multiple screens on this machine.
The solution is to run the command "sudo amdcccle" to invoke the ATI video management GUI. You can then set up the resolutions for each display, and the arrangement of screens. It all works well: even VMware guests can use multiple screens.
Perhaps also worth mentioning that in Ubuntu's "System Settings" / "Additional Drivers" GUI, I've selected "ATI/AMD proprietary FGLRX graphics driver".
